Pearla’s Famous Protein Muffin Recipe
Here is a coaching pro tip, premix dry ingredients and store in zip lock bag, for easy prep the next time you want to enjoy these delicious muffins in a snap. Coach Crystal also premixes her wet ingredients the night before she wants to make her muffins which makes this process as simple as mix pour and bake!
Pearla’s Protein Muffin Mix Recipe: (Makes 6)
2 Cups Oats
1 Cup Protein Powder
4 Tablespoon Cinnamon (exchange for chai spice or pumpkin pie spice)
1/4 cup chopped nuts (optional, pecan, walnuts, cashews, flaxseed, etc)
6 Egg Whites
1 Cup Berries
If mixture seems dry, add up to 1/2 C unsweetened apple sauce (or) COLD water.
Options with this recipe…During the fall, try using 1/2 C Pumpkin Puree with blueberries and pumpkin pie spice! Or Thinly sliced apples with apple pie spice.

Preheat oven to 350 degrees
Mix dry ingredients together. Mix wet ingredients together. Mix wet ingredients slowly to dry ingredients until mixed well. Spray 6 cup muffin tin or 8″X 8″ baking pan with PAM. Pour mixture into pan. Bake at 350 degrees for 25-30 minutes. Enjoy!
To have a HOT muffin daily, use an individual 1 cup pyrex glass bowl. Use 1/2 cup of dry ingredients with 2 egg whites and berries.
