Paleo PB Chocolate & Coconut Pie (No Bake!)

Yes, your dreams have come true! Plus! Not only is it delicious and healthy, it’s super easy to make! 

Pie Crust:

  • 1 cup raw pecans
  • 1/2 cup raw almonds 
  • 1/2 cup dates
  • 1 tsp vanilla extract

Directions:

Place all ingredients into a food processor and blend until a soft crumble forms and sticks together. Remove from food processor and press into pie pan. Refrigerate for a few hours to let set.

Pie Filling:

  • 1/2 cup Teddie Crunchy All Natural Peanut Butter (Unsalted)
  • 1 can full fat coconut milk
  • Another 1/4 – 1/2 cup of coconut milk (to help blend avocado mixture)
  • 2 ripe avocados
  • 1/2 ripe banana 
  • 1/2 cup organic cocoa
  • 1 tsp vanilla
  • 1 tbsp unsweetened coconut

Directions:

In a blender blend the peanut butter and 1 can of full fat coconut. Spread evenly into pie crust. For the chocolate later, cut and peel avocados and banana, add cocoa, vanilla and 1/4 cup coconut milk (or even a little less). Blend these ingredients as best you can. If you need to add in more coconut milk- go for it!  At the end I resorted to the old fashion way of baking…using a spoon to mix! (Hehe)

Once the chocolate mixture is done pour over peanut butter mixture. Sprinkle with coconut and let set in fridge for a few hours. Or the freezer if you’re in a hurry.
