Paleo Pancakes!

Mmmm, that smell…

You know, that smell of pancakes cooking in the frying pan, bacon baking in the oven and tea steeping in the kettle; it’s one of my favorites and really gets my stomach grumbling!

Eating “clean” doesn’t have to be boring, in fact, it’s way more FUN! You get to look for alternative recipes that give you your favorite dishes, in a healthy way! Think of all the possibilities!

This morning I tackled pancakes; I was having a pancake meltdown, if I didn’t eat one in ten minutes I was going to go craaaaaaaazy! So I thought how can I make a pancake without any of that garbage in it? This is what I came up with!

PALEO PANCAKES

Prep: 5 min Cook Time: 10 min Yield: 6 Pancakes (3 servings)

Ingredients:

1 c Almond Meal Flour

2 Farm Fresh Eggs

1/4 c cocnut milk or almond milk

1/4 c shredded coconut

1/2 c blueberries or whatever you have laying around in the cupboards! You can add in banana’s, strawberries, pecans, etc. Use your imagination!

Coconut Oil to grease the frying pan with

 Directions:

In a small bowl combined almond meal flour, farm fresh eggs, coconut milk and shredded coconut.

Mix Well!

Ta Da!

After it has been mixed, add in blueberries (or whatever you have chosen!)

After you have mixed in the blueberries, it’s time to heat up the frying pan! Set the burner on the lowest setting! It’s very important to keep on the lowest setting to ensure your pancakes cook throughout without burning!

Add just a dollop of coconut oil into the frying pan to grease it, after coconut oil has melted, scoop in about 1/4 c of your pancake mixture into pan.

Wait 2 minutes or until edges begin to look golden before flipping.

NOTE: Make sure too add in a dollop of coconut oil each time you go to make another pancake!

After finished cooking, let cool and top with raw honey or ghee! Or for a little extra sweetness top with warmed berries!
