Garlic Lime Steaks with Roasted Vegetables

(Serves 4)

Roasted Vegetable Ingredients
2 cups mushrooms, halved
2 cups cherry tomatoes
1 bell pepper, seeded and chopped
1 cup green beans, ends trimmed
2 large zucchinis, sliced
1 tsp. dried rosemary
1/2 tsp. black pepper
1 tsp. salt
2-3 tbsp. olive oil

Garlic-Lime Steak Ingredients
2 tbsp. olive oil
Juice of 2 limes, approximately 4 tbsp.
4 garlic cloves, crushed, to taste
Sea salt and pepper, to taste
4 10 oz. steaks

Preheat oven to 400 F.
Combine all the vegetables in a bowl, add the oil and seasonings; then mix well.
Transfer to a roasting tray and place in the oven.
Allow to roast for 30-45 minutes until the vegetables are cooked and starting to caramelize.
For the steak, combine the oil, lime juice, garlic and seasoning in a small bowl, then pour over the steak.
Allow the steak to marinate for 10 minutes, then cook on a hot griddle until done to your preference. Allow the steak to rest for a few minutes.
Serve immediately with the roasted vegetables.
