EASY Tomato, Cuke & Avocado Salad

Crisp cool winds are beginning to filter into our warm and sunny breezes that have been spoiling us New Englander’s the past twelve weeks. This can only mean one thing; summer is ALMOST over..bummer!

I’m sure you’re gearing up for the last shindig of the summer season…a Labor Day BBQ! Or getting ready to bring your favorite side dish to the neighbors house for another unforgettable weekend. Let’s keep it simple this year- more time with family and friends and LESS time in the kitchen! Try this quick and easy salad that is sure to please everyone’s taste buds!


  • Tomatoes, halved – I used a variety of grape and heirloom.
  • Avocado, sliced ‘n diced
  • Onion, sliced ‘n diced – White or Red is fine 
  • Olive Oil -just enough to lightly coat the salad 
  • Cucumbers – sliced ‘n diced  
  • Fresh Herbs – I had basil, oregano, and thyme.
  • Sea Salt & Black Pepper


After everything has been sliced ‘n diced

Combined into a fairly large bowl (preferably one with a lid), add in your fresh herbs, salt and pepper. Then, lightly coat with olive oil.

Now, if you’re using a bowl that you can cover slap that cover on and give that baby a good shake it mix it all together!


Chill for 30 minutes before serving..and enjoy!
