Creamy Carrot & Squash Soup with Ginger

There are no words to describe how amazing this soup is. You’ll just have to try and enjoy for yourself! Super easy to make and super quick!

 

Creamy Carrot & Squash Soup with Ginger

  • 4-5 Medium Carrots peeled and chopped
  • 1 inch cube of Ginger, thinly sliced.
  • 1 small squash, peeled, seeded and sliced and diced!
  • 1 sweet apple, chopped into cubes.
  • Sea Salt
  • Pepper
  • 1 tbsp olive oil
  • 1 tsp curry
  • 1/2 c full fat coconut milk.
  • Basil
  • 2 tbsp Ghee (clarified butter, we got ours off Amazon.com)

1. Chop carrots, squash, ginger and sweet apple into a small pot.

2. Pour in enough water so that there is still 1 inch of your veggies showing at the top of the pot of veggies. Add in curry.

3. Cook until tender and cooked through.

4.  When ready, pour ingredients into a food processor or blender. Add in 1/2 c of coconut milk and one more tsp of curry, sea salt and pepper.

5. Blend until creamy.

6. Add in Ghee and blend around for 30 more seconds.

7. Pour into a bowl and garnish with basil and add a few extra drops of coconut milk. Enjoy!
