Cauliflower & Cilantro Soup
Mhm! Warm up with a bowl of this smooth soup! It’s super easy!
- 1 Sm-Med head cauliflower
- 2 tbsp minced garlic
- 1/4 minced onion
- 1 1/2 TBSP Ghee
- 1/2 cup full fat coconut milk
- 4-6 cups chicken broth or vegetable broth (low sodium)
- Black pepper and sea salt
- Fresh cilantro to taste
First, cut head of cauliflower into small chunks. You can either boil in broth until tender or place in the crock-pot on high for a few hours!
Add in onions and garlic while cooking. Once tender place into blender, add in ghee, coconut milk, black pepper and sea salt and extra broth if needed to help create a smoother puree during blending. Blend mixture until smooth then add cilantro blend for a few more seconds. Pour and serve! Top with more cilantro and black pepper if desired.
