Protein “Fried Rice”

Skip the greasy take out and let this dish take over your taste buds!

Ingredients:

  • 1lb chicken breast, diced OR 1 lb shrimp, deveined
  • 1 TBSP coconut oil
  • 3 cups cauliflower, riced
  • 1 white onion, diced
  • 1/2 cup carrots, diced
  • 1/3 cup green peas
  • 4 farm fresh eggs
  • 2 TBSP coconut aminos
  • 2 TBSP scallions
  • black pepper, to taste
  • crushed red pepper, to taste
  • 1/2 TBSP minced garlic

Directions:

For chicken:

In a large skillet melt coconut oil and cook chicken. Season to taste. Once chicken is 90% done cooking add in cauliflower, onion, carrots, green peas, garlic, scallions and coconut aminos. Cook until vegetables are tender. Crack the eggs over the chicken and veggie mixture and scramble those bad boys up! Serve up in your favorite bowl and add more coconut aminos if you want more flavor!

For shrimp:

In a large skillet melt coconut oil and add in cauliflower, onion, carrots, green peas, garlic, scallions and coconut aminos. Cook until vegetables are tender. Crack eggs over the vegetable mixture and scramble those bad boys up! Add shrimp 3-5 minutes before your dish is done to avoid over cooking. Serve up in your favorite bowl and add more coconut aminos if you want more flavor!
