Chipotle Lime Aioli

Sometimes all you need is a little dipping sauce to make an ordinary meal into something a little more interesting. I made this chipotle lime aioli to go with some sweet potato fries and it was a wonderful accompaniment! I imagine any roasted vegetable would pair nicely with this tasty dipping sauce. The chipotle powder has a slight kick, so keep that in mind when adding it.

Chipotle Lime Aioli
Prep Time: 15 minutes | Serves: 4

 

Ingredients:

2 pastured egg yolks (I used duck eggs)
½ cup coconut oil, melted
½ cup olive oil
1 teaspoon white vinegar
1 teaspoon mustard powder
Salt and freshly ground pepper, to taste
½ lime, juiced
½ teaspoon chipotle powder, or more to taste
½ teaspoon smoked paprika
1 teaspoon hot sauce

Directions:

1.) Place the egg yolks in the bowl of a food processor with the vinegar and mustard powder. Process for about 30 seconds, tilting the processor to a side to help whirr the egg yolk around.

2.) Combine the coconut oil and olive oil and drizzle it in through the top of the food processor as slow as you can. It’s extremely important to go very slow! Once the mixture reaches the desired thickness, turn the machine off. You might not use all of the oil, depending on how thick you want it.

3.) Stir in the remaining ingredients by hand and adjust the flavors to taste, if necessary. Serve with your favorite roasted vegetables.
