Acorn Bowls with Beef
There’s nothing like comfort food with a twist! This evening’s dish brought acorn squash stuffed with grass fed beef.
- 1 lb grass fed beef. We got ours from Hidden Brook Farm
- 3 acorn squash’s
- 1 onion
- coconut oil
- 1 red pepper
- Bok Choy, chopped up.
- 2 tbsp coconut aminos
- 2 teaspoon cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/4 tsp sea salt
Cut all the acorn squash’s in half, and discard of the seeds.
All cleaned out!
In a frying pan, heat some coconut oil and begin frying onions, peppers, beef, fennel, and bok choy.
Slice the red pepper into thin strips!
Yum, my mouth was already watering at this point-
Combined in the rest of the spices, arugula, pecans, coconut aminos, and cilantro.
Cook in frying pan until beef is cooked through:
Stuff beef mixture into squash, and place into a glass baking pan.
Once all are stuffed, fill bottom of pan with hot water,
Bake in oven at 400 degree’s or until squash in tender.
